Pralus Caracas 75%

The Caracas bar has a delicate aroma with notes of earth, humus, herbs and tobacco. The cocoa's bitterness is subdued, as is the sweetness, and all the aromatic notes lead to a mildly acidic, long finish. Caracas, like the other Pralus single-origin bars, has a cocoa-mass content of 75%, and a touch of non-GMO soy lecithin for smoothness.

The beans used for this chocolate are of the Trinitario variety, hailing from 10 degrees 30 minutes North, and 66 degrees 55 minute West, which puts the plantation roughly to the southeast of Caracas, the capital of Venezuela.

François Pralus now has his own cacao plantation in Madagascar on the island of Nosy Be, also known as the “isle of perfumes”. From Sao Tome by the way of Brazil and Venezuela, Monsieur Pralus has personally selected cacao for the plantation from the finest origins in the world. The beans are grown, harvested and fermented with care and then roasted and transformed into a delightful chocolate in his Roanne facility.
