This definitive mainstay of Olive and Sinclair's line of Southern Artisan Chocolate™ actually happened somewhat by mistake... As they were roasting and testing cacao beans, continuing to learn more and more of cacao and the process of chocolate-making, they had brought in a 600-700 pounds of organic cacao from Panama. Unaware of its beautiful woody and earthy characteristics, we wanted there to be more fruit, sour flavors, and notes of good pure chocolate. This was not going to happen, and they just could not get those notes despite the tomes or temperatures they were roasting at. They decided, why not season it like a tomato? So they did, and although it did not accomplish everything they were looking for it to, the combination really worked! And so the testing continued until Olive and Sinclair discovered the perfect combination of a little salt and pepper with the somewhat underestimated classic Ghana cacao.
